Da stazione di posta e modesta osteria che era, é balzato agli onori della cronaca negli anni Quaranta grazie ai fratelli Villani: lei artefice della cucina, lui, Dino, mago della pubblicità, creatore del Premio Suzzara. Premio che ha fatto sedere al Cavallino personaggi come Zavattini e Orio Vergani, golosissimi delle gloriose ricette.
 
It started out as a modest inn where travellers changed their horses. By the 1940s, it became a "trendy" restaurant thanks to the Villanis. She was the chef and he was responsible for creating the Suzzara Literary Prize, which attracted writers of the day. Cesare Zavattini, scriptwriter for many of Vittorio de Sica's movies, and Orio Vergani, the journalist, enjoyed the unique cuisine.
